Granola

Granola is great for breakfast or a snack in the afternoon when you have the munchies or at night before you go to bed or......well......I think you see my point.  I like to serve mine with fruit and vanilla yogurt.  Of course, it would be great with some milk on top too!  

Granola (Becca Perry)

4 1/2 c. rolled oats
1 c. all purpose flour
1 t. baking soda
1 t. vanilla extract
2/3 c. unsalted butter, softened
1/2 c. honey
1/3 c. packed brown sugar

Preheat oven to 325.  Spray a 9X13 cake pan with cooking spray and set aside.  In a large mixing bowl combine all ingredients and mix (it is easiest to mix with your hands.)  Spread the mixture evenly in the prepared pan and bake for 18 minutes or until golden brown.  

After the granola is cooled you can add dried fruit, nuts, chocolate chips, etc.  I like dried blueberries, sliced almonds and mini chocolate chips.

Store in an airtight container (but if you don't have one, don't worry, it's so good it won't last too long!)  HA!

cooled - just the recipe shown above!
