Orange and Honey Glazed Carrots

I hadn't made these carrots in a long time and I forgot how good they are.  They are so. good.  This recipe can easily be doubled for a crowd (or for those who love carrots, like me.)  They are beautiful and delicious!

Orange and Honey Glazed Carrots (adapted from Ina Garten)

2 lb. carrots, peeled and sliced in 1" rounds
1/2 c. water
2 T. unsalted butter
2 T. honey
1/2 t. dried ginger
1 t. salt
1 t. orange zest
1/2 c. freshly squeezed orange juice
1/2 t. black pepper

Place water, butter, honey, ginger and salt in a large sauce pan and bring to a boil.  Add the carrots, cover and simmer for 5 minutes.  Remove the lid and continue to cook at medium heat until the liquid evaporates.  Add the orange zest and orange juice to the pan and stir to combine.  Continue to cook for 5 more minutes until the carrots are tender and the orange juice has formed a glaze.  Add the pepper and more salt, to taste.

These can be prepared ahead and then reheated.
