Mixed Green Salad with Sherry Vinaigrette

This is one of my favorite side salads of all time.  It is super easy to put together and the sherry vinaigrette can't be beat.  Sherry vinegar has a very distinct taste so there really is no substitute as far as other vinegars go.  It is a little pricey but is definitely worth the addition to your pantry and a bottle will last a long time!  Enjoy!

Mixed Green Salad with Sherry Vinaigrette (adapted from foodnetwork.com)

1 (5 oz.) bag mixed greens
1 red or yellow bell pepper, seeded and sliced
1 (2.25 oz.) can sliced black olives, drained
1/2 c. feta cheese
2 T. extra virgin olive oil
2 T. sherry vinegar
1 t. oregano
1 garlic clove, finely minced
1/2 t. salt
1/4 t. pepper

Place the salad greens, bell pepper, olives and feta cheese in a large bowl and set aside.  For the vinaigrette combine the olive oil, sherry vinegar, oregano, garlic, salt and pepper in a bowl with a tight fitting lid and shake to combine.  Pour over the salad, toss and serve!
