Spiced Apple Butter Bran Muffins

This is my new favorite breakfast.  I've made two batches of apple butter and part of each batch went into these muffins.  The good news is they are easy AND they are good for you!  And, you can eat two since they are so low cal!  AND, they keep you full!  The breakfast of champions you might say.  Enjoy!

Spiced Apple Butter Bran Muffins (adapted from eatingwell.com)

1 1/2 c. white whole wheat flour (can also use all purpose)
2 1/2 t. baking powder
1/4 t. salt
1/2 t. cinnamon
3/4 c. unprocessed wheat bran (or oat bran)
1 T. flaxseed (or 1 egg)
3 T. water (omit if using egg)
1/2 c. milk (I used vanilla almond milk)
1/2 c. apple butter (you can buy the stuff in the jar or make your own)
1/2 c. brown sugar
1/4 c. applesauce (or canola oil)
3 T. molasses

Preheat the oven to 375.  Coat 12 standard muffin cups with cooking spray (or use liners) and set aside.  Whisk flour, baking powder, salt and cinnamon together in a large bowl.  Stir in the bran.

Whisk flax seed (or egg), water (if using flax seed), milk, apple butter, brown sugar, applesauce (or oil) and molasses together in a small bowl.  Add the wet ingredients to the dry ingredients and stir until just combined.  Scoop the batter into the prepared pan and bake 18-22 minutes until the tops spring back when touched lightly.  Let cool in the pan for 5 minutes.  Loosen the edges with a butter knife and turn the muffins out onto a wire rack to cool.
