Crock Pot Chicken Tikka Masala (adapted from theskinnyfork.com)
1 yellow onion, diced
1 red bell pepper, diced
1 (13 1/2 oz.) can light coconut milk
1 (6 oz.) can tomato paste
1 (14 1/2 oz.) can crushed tomatoes
1 (14 1/2 oz.) can diced tomatoes
2 carrots, peeled and sliced
1 t. dried ginger
2 garlic cloves, minced or 1 t. garlic powder
1 T. curry powder
2 T. garam masala
1 t. cumin
1/2 t. chili powder
1/4 c. chopped cilantro
Combine all ingredients, except for cilantro, in a crock pot. Stir well to combine. Cover and cook on high for 4-6 hours or on low for 6-8 hours. Serve over basmati rice and garnish with cilantro.
This could be prepped ahead and cooked when you are ready.
