Cilantro Lime Tilapia Tacos

These tacos are a fiesta for your mouth and your pocketbook.  Yummy tilapia mixed with tomatoes, cilantro and jalapeno (not too much) and served on tortillas with avocado and salsa.  Quick, easy and delicious!  

Cilantro Lime Tilapia Tacos (adapted from skinnytaste.com)

1 t. extra virgin olive oil
1 small onion, diced
4 garlic cloves, minced
1 lb. tilapia filets, rinsed and patted dry
1 jalapeno pepper, minced
1 (14 oz.) can diced tomatoes
1/4 c. cilantro, chopped
3 T. lime juice
Salt and pepper, to taste

To serve:

Avocado slices
Salsa
Sour Cream
Shredded cheese
Lime wedges

Heat oil in a skillet and saute onion until translucent, then add garlic.  Place tilapia in the skillet and cook until the flesh starts to flake.  Add jalapeno peppers, tomatoes, cilantro and lime juice.  Saute over medium high heat for about 5 minutes, breaking  up the fish with the spoon to mix everything well; season to taste with salt and pepper.  Serve in corn or flour tortillas with desired toppings.
