Salisbury Steak with Mushroom Gravy

This recipe reminds me of my dad.  He was a real meat and potatoes guy and always love a good hamburger steak.  In fact, I did get to make this for him one time and he had no idea it was ground turkey mixed with ground beef!  I fooled him!  This is a great adaptation for you if you, too, like meat and potatoes but need it to be skinnier and healthier without sacrificing flavor.  Serve with garlic mashed potatoes (you can find the recipe here) and the meat and potatoes crowd will sing your praises!

Salisbury Steak with Mushroom Gravy (adapted from skinnytaste.com)

1 1/2 t. extra virgin olive oil
1 medium yellow onion, diced
1 1/3 lb. ground turkey (93% lean)
1 lb. ground beef (I used 96% lean)
1/2 c. dry breadcrumbs
1 large egg
1 large egg white
2 c. beef broth, divided
1/4 t. salt
1/8 t. black pepper
8 oz. sliced mushrooms
2 T. all purpose flour
2 T. tomato paste
1 t. red wine vinegar
2 t. worcestershire sauce
1/2 t. mustard powder
1/4 c. water
2 T. chopped parsley for garnish (optional)

Heat olive oil over medium heat and saute onions for 5 minutes until golden brown.  In a large bowl combine half of the sauteed onions, ground turkey, ground beef, breadcrumbs, egg, egg white, 1/4 c. beef broth, salt and pepper.  Shape into 8 oval patties. 

In a large, deep skillet over medium high heat, brown both sides of the patties then set aside on a dish.  Add the mushrooms to the skillet and saute 2-3 minutes.  Return the patties to the skillet with the mushrooms.

In a small bowl blend remaining broth and flour until smooth.  Mix in remaining onions, tomato paste, vinegar, worcestershire sauce, mustard powder and water.  Pour over the meat and mushrooms in the skillet.  

Cover and cook on low heat for 20 minutes, stirring occasionally.  Garnish with parsley if desired and season to taste with salt and pepper.  Serve!

This can be made ahead and reheated.
