Creamy Tomato Soup

If you like tomato soup you are going to LOVE this soup!  It is super easy and quick to make, the portions are HUGE and, the best part is, it's homemade!  Make sure you buy the fresh basil to add at the end, there really is no substitute!  I like to serve this with grilled cheese.  On this particular occasion I used my favorite bread (Trader Joe's Sprouted Rye), havarti cheese and basil pesto.

Creamy Tomato Soup (adapted from foodnetwork.com)

4 c. low sodium vegetable broth (can also use chicken broth)
1 (28 oz.) can crushed tomatoes
1 c. fat free half and half
Salt and pepper
1 small bunch basil, chopped

Combine broth and tomatoes in a medium sauce pan over medium high heat and bring to a bubble.  Add the half and half and reduce the heat to low.  Season with salt and pepper and simmer gently for 15 minutes, stirring occasionally.  Add the basil, taste the soup for seasoning and serve!
