Simple Fall Salad

This is a super simple and delicious fall salad to make when you need a quick side.  I served it with Rigatoni with Pumpkin Sauce but it would be good with anything you are cooking up this fall.  You could also add some grilled or baked chicken for an easy and low cal lunch!  The salad portions are huge and definitely enough for lunch if you add some protein along with it!  I used a honeycrisp apple but a green apple or even a pear would work great.  Enjoy!

Simple Fall Salad (adapted from Cooking Light, November 2013)

10 oz. mixed greens
1 honeycrisp apple, core removed and thinly sliced
1 oz. sunflower seeds
2 T. extra virgin olive oil
2 T. apple cider vinegar
1/2 t. Dijon mustard
1/2 t. honey
1/2 t. salt
1/4 t. black pepper

In a large bowl place mixed greens, apple slices and sunflower seeds.  Set aside.  In a small container with a tight fitting lid add the olive oil, vinegar, mustard, honey, salt and pepper and shake to combine.  Pour on top of the greens and toss.
