Slow Cooker Pork Posole

It's beginning to get very chilly outside!  Yay!  Time for sweatshirts, soup and fuzzy socks!  This is a wonderful soup recipe you can put together the night before or in the morning, cook all day and come home to a house that smells fantastic.  Serve with rolls or cornbread and dinner is done.  Enjoy!

Slow Cooker Pork Posole (adapted from Cooking Light, October 2013)

1 1/2 lb. pork loin, cut into chunks
1 yellow onion, diced
8 garlic cloves, minced
1 1/2 t. cumin
1/2 t. crushed red pepper flakes
4 c. low sodium chicken broth
1 c. salsa verde (I used Herdez)
2 (28 oz.) cans hominy (I used yellow and white)
1/2 c. cilantro, chopped
8 large radishes, thinly sliced
1 lime, cut in 8 wedges

In a 6 quart slow cooker place pork, onion, garlic, cumin, crushed red pepper, chicken broth, salsa and hominy.  Cover and cook on low for 6-8 hours or on high for 3-4 hours.  Ladle soup into bowls and top with cilantro, radishes and a squeeze of lemon juice.
