Tofu Tacos

I don't know about you but I am always looking for interesting ways to eat vegetarian.  Well, I have a really great one for you today!  Extra firm tofu is seasoned with taco seasoning and seared in a hot pan then topped with a delicious slaw of cabbage, sliced radishes, chopped cilantro and scallions along with shredded cheese and salsa verde.  Tofu is a great thing to use because it takes on the flavor of whatever you season it with really well.  You will not miss the meat, I promise!

Tofu Tacos (adapted from foodnetwork.com)

12 oz. extra firm tofu, drained and cut into 8 slices
4 c. shredded coleslaw mix of your choice
1 small bunch radishes, thinly sliced
1/2 c. cilantro, chopped
1 bunch green onions, sliced
1 1/2 T. extra virgin olive oil, divided
2 limes (1 zested and juice, 1 cut into wedges)
Salt and pepper
1/4 c. nonfat Greek yogurt
1 T. taco seasoning (buy a packet or make your own)
8 tortillas of your choice
Shredded mozzarella or pepper jack cheese for topping
Salsa verde for topping

Lay the tofu slices flat on a stack of paper towels; top with more paper towels, then put a heavy skillet on top to press out the excess water, about 10 minutes.  Meanwhile, combine the coleslaw, radishes, cilantro, green onions, 1 T. olive oil, lime zest and half of the lime juice in a large bowl and toss.  Season to taste with salt and pepper.  Mix the yogurt with the remaining lime juice in a small bowl and season to taste with salt and pepper.  

Brush the tofu on both sides with the remaining olive oil and sprinkle with taco seasoning.  Heat a nonstick skillet over medium high heat and add the tofu and cook until it begins to crisp, about 4-5 minutes.  Flip and cook 2 more minutes.  Cut into strips and serve in tortillas topped with the slaw, yogurt sauce, shredded cheese and salsa verde.
