Strawberry Spinach Salad
For the dressing:
1/4 c. apple cider vinegar
1/4 c. extra virgin olive oil
1/4 c. sugar
1/2 t. salt
1/4 t. pepper
1/8 t. garlic powder
1/4 t. paprika
For the salad:
10 oz. baby spinach
1 small head bibb lettuce, chopped
1 c. shredded monterey jack or mozzarella cheese
1/2 c. pecan halves, toasted
1 pint strawberries, quartered
For the dressing:
In a small container with a tight fitting lid place all ingredients, cover and shake to combine.
For the salad:
Combine all the ingredients in a large bowl, top with dressing and toss!
