Avocado Chili Relish (bhg.com)
2 T. extra virgin olive oil
2 T. fresh cilantro, chopped
2 medium jalapeno chiles, minced
2 small shallots or 4 green onions, finely chopped
2 T. freshly squeezed lime juice
1 c. diced tomatoes (I used grape tomatoes, quartered)
2 avocados, peeled, seeded and coarsely chopped
Salt and black pepper to taste
In a bowl, whisk together the olive oil, cilantro, jalapenos, shallots or green onion and lime juice. Gently fold in the tomatoes and avocados. Sprinkle with salt and pepper.
I made this a few hours ahead of when we wanted to eat it to let the flavors meld. I wouldn't make it too far ahead or the avocado will turn brown.

This is AMAZING!! Took to a BBQ yesterday and family could not get enough they put it on everything!!! The flavor is yummy!!
