Black Bean Hummus

This black bean hummus is a delicious and interesting addition to any veggie tray you are making this summer and would be perfect for 4th of July!  Serve with carrots, peppers, broccoli, cucumber, grape tomatoes or pita chips.  Enjoy!

Black Bean Hummus (adapted from foodnetwork.com)

1 (15 oz.) can black beans, drained and rinsed
1 garlic clove
2 T. olive oil
2 T. freshly squeezed lemon juice
1 T. white wine vinegar
1/2 t. cumin
Salt and pepper to taste

Blend all ingredients together in the food processor until smooth.  Refrigerate for at least 15 minutes before serving. 

This is a definite make ahead!
