Arugula Salad with Avocado and Tomatoes

I had this salad at a restaurant about a year ago and I thought "I can re-create this at home!"  It's not  complicated but it is SO good.  The peppery arugula, the creamy avocado, the acidic tomatoes and the perfect (EASY) vinaigrette to bring it all together.  Enjoy!

Arugula Salad with Avocado and Tomatoes (Shelly Redmond)

5 oz. baby arugula
2 roma tomatoes, diced in bite sized pieces
2 ripe avocados, diced in bite sized pieces
2 T. balsamic vinegar
2 T. extra virgin olive oil
1/2 t. salt
1/4 t. black pepper

Combine the arugula, tomatoes and avocado in a large salad bowl and set aside while you make the vinaigrette.  In a small bowl with a tight fitting lid combine the vinegar, olive oil, salt and pepper.  Put the lid on the container and shake vigorously to combine.  Toss the salad with the dressing and serve!
