Farro with Cucumbers, Feta and Sun Dried Tomatoes (adapted from skinnytaste.com)

2 T. shallot, minced
1/4 c. sun dried tomatoes, minced
1/4 c. feta cheese crumbles
1/2 medium english cucumber, finely diced
1/2 medium red bell pepper, finely diced
2 T. freshly squeezed lemon juice
1 T. extra virgin olive oil
2 T. fresh basil, chopped
1/2 t. salt
1/4 t. black pepper
Mix cooled farro with remaining ingredients and toss well. Serve chilled or at room temperature.
