Texas Caviar (Shelly Redmond)

1 (15 oz.) can black eyed peas, drained and rinsed
4 green onions, finely chopped
1/2 large green pepper, finely chopped
1 (15 oz.) can yellow corn, drained and rinsed
1 (10 oz.) can Rotel tomatoes
1/2 c. cilantro, chopped
4 T. freshly squeezed lime juice
2 T. extra virgin olive oil
1 t. salt
1/4 t. black pepper
Combine all ingredients in a large bowl and stir to combine. Refrigerate until ready to serve. Can be served cold or at room temperature with tortilla chips.
