Overnight Egg Strata

If you are looking for an easy egg casserole that you can assemble the night before and is different from other egg casseroles you've seen before this is the one for you!  I got this recipe from my friend, Nicki (hi, Nicki!)  She had adapted it a little bit and I adapted it even more!  The base for this strata is toasted english muffins (genius!)  Feel free to use any vegetables you like - this is just a suggestion.  Enjoy!

Overnight Egg Strata (adapted from allrecipes.com)

1 T. unsalted butter
8 oz. sliced white mushrooms
1/2 bell pepper, diced (I used red)
1/2 onion, diced (I used yellow)
1 t. salt, divided
1/2 t. pepper, divided
2 1/2 english muffins, toasted (I know, it's weird to use a half, just eat the other half!)
2 oz. baby spinach
1 c. shredded cheese (I used skim co/jack)
4 large eggs
1 c. skim milk
1/2 t. dry mustard powder

Melt the butter in a medium skillet over medium heat and add the mushrooms, bell pepper and onion and saute, stirring occasionally, for 10 minutes until most of the liquid has evaporated and the mushrooms are beginning to brown.  Season with 1/2 t. salt and 1/4 pepper.  Set the vegetables aside to cool.

Spray an 8X8 pan with cooking spray and arrange 4 muffin halves, cut side up in the bottom of the dish.  Break up the remaining muffin 1/2 and fill in the cracks.  Spread 1/2 c. of the cheese over the muffins then distribute the veggie mixture over the top evenly.  Layer the spinach on top of the veggies.

In a large bowl, whisk together the eggs, milk, dry mustard, 1/2 t. salt and 1/4 t. pepper until well combined.  Pour the egg mixture over the muffins and vegetables.  Cover the dish and refrigerate overnight. 

The next day preheat the oven to 375.  Remove the casserole from the oven and let stand for 30 minutes.  Spread the remaining 1/2 c. cheese in an even layer over the casserole.  Bake for 35-40 minutes until the eggs are set and the top is browned.  Let sit 5 minutes before cutting into squares.

I served this with turkey sausage!

Hi Shelly. I love Egg Strata and can't wait to try your recipe but I saw a typo and thought I better point it out to you. You say to preheat the oven, but then you jump right to taking the dish out of the oven without mentioning how long to put it in there for, LOL. Thought you should know, have a great day.

What the recipe is saying is, since you refrigerate the casserole overnight you should let it sit out for a half an hour before you bake it! So, preheat the oven, take the casserole out of the fridge, let it sit for a half hour then bake it for 35-40 minutes! Hope that helps!!
